healthy treats made in minutes


Around the holidays we traditionally binge on sugar-filled treats with abandon. But  our everyday consumption habits are changing and I wanted to include at least ONE healthier treat on the Christmas cookie tray this year. I found this winner on Pinterest and thought you might enjoy it too!

Raw Brownies

2 cups whole walnuts, 10 oz Medjool dates, pitted (2 ½ cups), 1 cup raw cacao (good quality cocoa powder), 1 cup raw unsalted almonds, roughly chopped, ¼ tsp sea salt

Place walnuts in food processor and blend until nuts are finely ground. Add the cocoa powder and salt, continue to process. Add the dates one at a time through the feed tube while it is running until you end up with a mix that appears rather like cake crumbs, but that when pressed together easily sticks (if the mixture doesn’t stick well, add more dates). Finally add the almonds and process until chopped.

Press mixture into a lined cake pan, brownie mold or simply roll into teaspoon-size individual servings. Place in freezer or refrigerator until firm or ready to serve (they cut better when they are very cold). Store in an airtight container.
